The Resort’s B&G restaurant mixes minimalism with the excellence of local products in a unique new gastronomic menu.
Vilalara Thalassa Resort in Porches has just launched a new concept and a carefully elaborated tasting menu at its fine dining B&G restaurant. Resident Chef Diogo Pereira and Sommelier Vitaliy Lesyuk are responsible for the menu, called Maré (Tide), which is available in 6 or 7 moments and wine pairing.
The menu, which focuses on “an exquisite selection of dishes that celebrate the authenticity and best flavours of regional Algarve cuisine”, includes delicacies such as mackerel with garum, Scarlett shrimp from Vila Real de Santo António, fresh scallops with Silves arjamolho (cold tomato soup), oysters from the Ria de Alvor, grouper Caldeirada, goose barnacles from Sagres, Alentejo black pork neck, and matured Arouquesa beef. Desserts include tangerine textures with pennyroyal, Chocolate and Carob, a new twist on the Pastel de Nata and Vilalara’s iconic melosa liqueur Soufflé.
Freshness and minimalism are the central elements of the new menu. For Chef Diogo Pereira: “We follow a minimalist approach in our kitchen, where we value the ingredients’ purity and minimize any waste. Our goal is to allow a product of exceptional quality to stand out and be appreciated in all its authenticity. We want to provide an experience where you can fully savour the freshness and richness of the Algarve flavours.”
“We establish and value a close link with local producers and focus on simplicity, also considering the reduction of our environmental footprint. By choosing products from the region, we can shorten as much as possible the time between their harvest or fishing and their use in the kitchen, thus contributing in a maximum way to the sustainability and preservation of local natural resources”, concludes Diogo Pereira.
The new gastronomic experience of the B&G at the Vilalara Thalassa Resort is available from €98 for six moments, which includes bread, snacks, starter, main course, dessert and petit-fours. The seven-moment menu, from €118, includes bread, snacks, a starter, a fish dish, a meat dish, dessert and petit-fours.
The B&G restaurant is open from Tuesday to Saturday, from 19:00 to 22:00, for guests and the general public.
