Tavira’s Hotel Rural Quinta do Marco will host a wine pairing dinner on Saturday, March 24, from 8pm.
All dishes served by chef Benjamin Bivar will be accompanied by a wine presented by Idealdrinks, which has wineries scattered throughout several Portuguese wine regions, namely Bairrada, Dão and Vinho Verde.
The Colinas Brut Nature 2013 sparkling wine will be served as a welcome drink, followed by tasty appetizers such as locally-picked olives, Algarve-style carrots, rustic bread, melon with presunto (smoked ham) and alheira (a type of Portuguese sausage) pâté which will be accompanied by Colinas Rosé 2015.
The starter will be a pea soup with tuna ‘muxama’ and poached quail egg served with Royal Palmeira 2015.
One of the main dishes will be codfish confit with sweet potato purée and coriander paired with the Longos Vales 2015 wine.
The meat dish will be guinea fowl breast roasted in the oven with grapes and pears, served alongside carob risotto and sautéed vegetables, and accompanied by Colinas Tinto 2011.
Dessert will be a squash puff pastry with cardamom ice cream, paired with Colinas Blanc de Blancs 2012.
