Simple pickled onions

Some people say simple is best! So here is a recipe that complements any barbecue food and is quick and easy to make.

It gives you a wonderful sweet and sour flavour, and goes really well with pulled pork or on top of a homemade burger. Also, if you put the pickled onions into a sealed sterile container, they will last up to a week in the fridge.

Ingredients
■ One thinly sliced whole red or white onion
■ 100ml hot boiled water
■ 100gm sugar
■ 70ml cider vinegar
■ 2 tablespoons peppercorns, or mustard seeds or coriander seeds or a mixture of all three.

Method
1. Add the hot boiled water to a container, tip in the sugar and stir until the sugar has dissolved.
2. Add the remaining ingredients to the water mixture and leave to cool
3. Place lid on the container and place in refrigerator
4. In one hour you will have really tasty pickled onions to add to barbecue or dress a salad. Enjoy!
