Portuguese scientists at the Instituto Politécnico de Leiria are in the process of creating hamburgers, sausages and ‘ham’ from marine resources, namely algae and certain fish that are not otherwise used/ consumed. The “ProReMar” project, benefitting from around €80,000 of EU funding under Mar 2’020, is setting out to make use of nutritious marine products with low commercial value; the final objective being to put these alternative ‘fast foods’ on the commercial market.
