If you’ve never tried oysters before but have always been curious about this sea delicacy, then head for Tavira this weekend for the Festival da Ostra (Oyster Festival) taking place by the Municipal Market from 6pm to 1am.
As part of the ‘Summer in Tavira’ programme, the festival runs until August 7 and provides lovers of seafood with the opportunity to taste one of the best products the Ria Formosa has to offer – the oyster.
The event is organised by Água Salgada “The Seafood House”, with the support of Tavira Câmara, and the objective is to promote the oysters produced in the Ria Formosa and raise awareness about the national and international potential of this economic activity.
Oysters are best eaten raw on a half shell with a squeeze of lemon juice or wine vinegar. Try also with finely chopped shallots, Tabasco and/or chilled vodka.
Opening them requires some mastery. You need a strong, thick bladed knife with which to pry the scrubbed oyster open.
Protect your hand, hold the oyster cupped side down, insert tip of knife in the middle and twist knife to pop open the shell. Gently slide a finer knife along the inside to loosen the muscle which will release the shell. Don’t discard the juice.
