Mozzarella and pesto-stuffed chicken wrapped in Presunto ham

Ingredients (serves 4):
4 chicken breasts
One jar of green or red pesto
1 or 2 balls of buffalo mozzarella
Two plum tomatoes
8 slices of Presunto ham
Sea salt and ground pepper to taste
We had some new friends over for a BBQ last week and thought I would try out a new recipe on them. We were trying to create a meal which would give them an Iberian feel as they are thinking of moving to the Algarve in the not too distant future.
This dish really hit the spot and one of the friends declared it to be “Yumbo Jumbo” which we took to be high praise indeed!
As with all my cooking, this dish is quick and easy to prepare. Place your four chicken breasts on a board; using a small knife make incision and create a pocket; then with a rolling pin just give them a bit of a bash to flatten them out a bit.
Open up the pocket and spoon in a couple of teaspoons of the pesto and then place inside three thin slices of mozzarella, tw slices of tomato and then a top up with a teaspoon of pesto.
Massage the pocket to close it up a little. Place two slices of the fabulous presunto ham on the board slightly overlapping and place the now stuffed chicken breast in the middle. Wrap up the chicken breast as tightly as you can in the ham. Use a cocktail stick to hold in position if required. Finally season with a little ground pepper and sea salt.
You are now ready to start grilling this parcel of loveliness on a medium to low heat on your gas or charcoal BBQ for about 4 to 5 minutes each side, depending on the size of the breast.
Remove from heat and serve with a simple green salad and some chunky chips!
