Chaîne des Rôtisseurs enjoy exquisite meal at Al Sud by Chef Louis Anjos
A small group of Chaîne members and friends enjoyed the most exquisite dinner at Chef Louis Anjos’ new restaurant Al Sud on the luxury Palmares Ocean Living & Golf Resort, Lagos, recently awarded a Michelin star.
Chef Louis Anjos is an old member of the Chaîne des Rôtisseurs, and one of the younger generations of highly talented Portuguese Chefs.
The dinner was, in itself, a demonstration of high-class gastronomy served in nine gastronomic moments, each moment showcasing one aspect of the Algarve’s vast gastronomy offer: amuse-bouche of crab, tuna tartare and mussel, mackerel with oyster and caviar, an amazing “canja” (soup) of clams and coriander, roasted red mullet with tomato and carrot, an “açorda” of John Dory with roe, a beautiful pigeon served with wild mushrooms and foie gras, and two amazing desserts, one based on raspberry, the other on the Algarvian almond with rosemary and honey from Monchique. A selection of petit fours on the theme of peanuts rounded the meal superbly!
A fantastic array of the freshest Algarvian products, perfectly complemented by the wine selection from the Sommelier, opening and finishing with wines from Madeira, and visiting on the way vineyards from the Lisbon region, the Algarve, the Tejo, and the Vinho Verde region.
Another memorable evening, in the true spirit of gastronomy and conviviality of the Chaîne des Rôtisseurs, compliments to Chef Louis Anjos.
