Lemon Cheesecake Pancakes

What better way to start Valentine’s Day than to surprise your other half with a truly mouth-watering breakfast served in bed! These easy-to-make, light and fluffy pancakes are certain to delight your partner – and put a spark in your romance!

Ingredients
▪ 225g softened cream cheese
▪ 2 beaten eggs
▪ 15g plain flour
▪ 6g sugar
▪ 10g melted butter
▪ Icing sugar
▪ 5ml lemon juice
▪ Half a lemon, cut into wedges

Method
Beat the cream cheese together with the eggs in a bowl until the mixture is almost smooth. Stir in the flour, sugar and 1 teaspoon of the melted butter to make a batter.

Heat the remaining butter on a griddle, or a heavy frying pan, over medium heat. Drop the batter onto the griddle in generous tablespoon-sized dollops. Cook until lightly golden brown, roughly 3 minutes. Turn the pancakes over and cook an additional couple of minutes.

To serve, sprinkle icing sugar and drizzle with lemon juice. Serve with lemon wedges.
