Chef Rui Silvestre prepares to ring in the New Year with a gastronomic feast focused on the Algarve’s star products.
With little more than two months until the end of the year, chefs are starting to prepare for the biggest night of 2023. Close to the Spanish border, at the Monte Rei Resort Golf & Country Club, New Year’s Eve is set to be celebrated at the Vistas Rui Silvestre restaurant (1* Michelin) with the Algarve’s star products.
Chef Rui Silvestre is preparing a gastronomic menu focused on fish and seafood from the Algarve coast, which will be accompanied by the melodic chords of a harpist in what will be a harmonious farewell to 2023.
“Celebrations are always very special. The last dinner of the year has a symbolic meaning that can only be experienced with emotion. Therefore, we wanted to offer a complete experience that symbolises our philosophy at Vistas Rui Silvestre, seeking excellence and leaving customers with the distinctive mark of high quality and unusual pleasures. This is a dinner that we call ‘gastronomic glamour with sublime notes’, which combines delicate flavours with soft sounds, with majestic and elegant expressiveness”, explains chef Rui Silvestre.
“In line with our tasting menu, available throughout the year, our preference is for fish and seafood, in a tribute to the best products from the Algarve, with light and unexpected flavours. A meal enjoyed moment by moment, enlivening the senses, paired with our selection of wines”, says the chef about this end of year dinner.

The menu costs €380 per person, wine pairing included.
In addition to the New Year’s Eve Dinner at Vistas Rui Silvestre, customers also have the opportunity to opt for a complete package, with the Intimate New Year’s Eve Dinner, accommodation at the Monte Rei Resort Golf & Country Club hotel complex, where the restaurant is located, and a New Year’s Day Brunch.
