Chef Miguel Castro e Silva is one of the most celebrated Portuguese chefs, associated with great restaurants such as the Bull & Bear in Porto and the Tuga restaurant in London.
O Terraço restaurant at Martinhal Beach Resort & Hotel in Sagres is now welcoming the chef for an evening of fish and seafood delights, accompanied by a selection of wines from top Portuguese producers signed by Miguel Castro e Silva. The gastronomic experience takes place on January 24 from 7pm.
Chef Miguel Castro e Silva’s restaurants have always been included in the group of the best of Portugal, but it was with the invitation to open the Bull & Bear that the chef’s kitchen obtained international recognition. The Bull & Bear has even been considered one of the 25 best restaurants in Europe by The Financial Times.
Miguel Castro e Silva transformed Portuguese fine dining and was one of the major drivers of sous vide, or low-temperature cooking, which today has a prominent place in top restaurants. He now owns the sophisticated DeCastro restaurant in Lisbon.
The extensive menu being prepared for O Terraço includes dishes such as rocket salad risotto with cockles (Dalva MCS White Douro), sole fish and scarlet shrimp, beurre rose and green asparagus (Ribeiro Santo lote MCS White Dão), sea bass with shiitake cream, spaetzle, trumpets and morels (Ribeiro Santo lote MCS Red Dão) and squid and potato with two olive oils (Douro Dalva lote MCS Red).
