Coimbra scientists come up with “method to prolong the life of ham”

Investigators at the University of Coimbra have developed an edible casing for sliced ham that prolongs its life without compromising quality, and complies with all international demands for food hygiene and security, reports Correio da Manhã this week. The pioneering overlay can be used for other meat products, says the paper – not mentioning recent ‘health scare’ reports highlighting the dangers of eating processed meats and their links to cancers.
