Located in Loulé, the Aurora restaurant is chef Vitor Veloso’s new ‘2-month-old baby’. The name is both a tribute and the fulfilment of a promise he made long ago to his paternal grandmother, who he says was also a great cook.
Throughout his life he kept this dream alive, always cooking, creating his own kitchen, passing through numerous restaurants and hotels where he left his mark. “It’s a cliché, I’m sure, but cooking is more than a passion for me, it’s a way of live. My mother held two jobs when I was growing up and, to help her out, I’ve started cooking for my little sister and me. And I’ve never stopped since!”, he tells us with a big smile!
Born in the midst of uncertainty, in an upside-down world filled with risks and fears, Aurora brings a new concept to Loulé. Here, chef Veloso wants to bet on a cuisine that features style, quality and freshness, combining the very best the region has to offer – from the Algarve hills to the Ria Formosa – and promising the highest standards in terms of service. “It’s all about local, fresh and seasonal products, so the menu will change with time, following the seasons”, chef Veloso says, “I will not serve orange in the summer or mackerel in the winter, as it’s out of season and thus makes no sense. Plus, we all need to be more and more responsible in what the sustainability of our planet is concerned, and I want Aurora to do its part.”
At his new restaurant, the ‘Mesa do Chefe” (chef’s table) promises to be a success. This exclusive setting allows for groups of two to twelve people to enjoy a very special meal that will be a complete surprise up until the moment they sit down for dinner. This tasting menu has to be booked 24 hours in advance, and its signature cuisine promises to transform a simple meal into an explosion of flavours.
