Chef of the hills: Macdonald Monchique announces new executive chef

Luís Batalha is the new executive chef at Macdonald Monchique Resort & Spa.

Batalha will be leading the kitchen teams at the resort’s five restaurants: Mon-Chic, Pizzaria da Serra, Mercado Culinário, Mezzanine Bar and Cascata Bar.

The Mozambican-born Chef says he has accepted this new challenge with enthusiasm, hoping to bring the best of world cuisine to the hills of Monchique.

Luís Batalha has a modern cooking approach gained over 20 years of experience, but admits his love for Portuguese and Mediterranean flavours.

He brings his passion for incorporating locally-sourced food products into the menus and vows to be “authentic”, preparing unique dishes “that will dignify the resort”.

Batalha took his first steps in the world of gastronomy in 1993, enrolling in several cooking courses.

He began his career at the Four Seasons Hotel Ritz in Lisbon, later accepting a position abroad at the La Grande Mare Hotel in Guernsey.

The Chef has won several prizes in the “Chefe Cozinheiro do Ano” contest in 2000, 2004 and 2007, and picked up the Helmut Ziebell Innovation Award.

He has on his resumé Vila Vita Parc, Convento do Espinheiro Hotel (Évora), the Suites Alba Resort, the CS Algarve group (running all 14 restaurants), the Cascade Wellness & Lifestyle Resort, and more recently the D. Filipa Hotel.
