Chaîne des Rôtisseurs’ Christmas  dinner

Around 30 members of the Algarve Baillage of the Chaîne des Rôtisseurs enjoyed a sumptuous Christmas dinner at the two-star Ocean Restaurant of the Vila Vita Parc near Porches. Renowned chef Hans Neuner created a memorable menu, which was enjoyed by all. Members were greeted in the foyer of the restaurant by the Bailli of the Algarve Branch of the Chaîne, Mich Dressler, and the general manager of the Vila Vita Parc, Kurt Gillig, with a splendid selection of finger food accompanied by Quinta do Encontro espumante.

The dinner proper commenced with some most creative amuse-bouche accompanied perfectly by a Weingut am Nil Riesling from the Pfalz, Germany.

This was followed by a rich smoked Périgord goose liver with peanut and Equatorial noir chocolate, accompanied by an unusual and interesting Orionte Licoroso Tinto from the Adega Mayor, Alentejo.  

Next came some sea bass with crosnes and winter truffle accompanied by Lavradores Feiteria’s 2008 – complex but relatively lightweight for a Douro, Meruge Tinto.

Members were then treated to some quite excellent saddle of venison with red cabbage, white peach and brussels sprouts, complemented perfectly by a 2009 Tinto Reserva from Vila Vita’s own Alentejo estate, Herdade dos Grous.

The climax was a beautifully arranged dessert of persimmon with Jivara chocolate macadamia and long pepper, accompanied by a light but delicately nutty Quinta do Vallado 20 year old Tawny port.

This was a truly memorable occasion, representing a fitting conclusion to the Chaîne’s 2012 programme.
