BBQ Mud Cake

Cook a cake on the BBQ – sounds strange but it’s true. As I get more and more into BBQing, I realise that during the long Algarvean summer months there is little or no need to cook in a hot and stuffy kitchen, and this recipe proves it. Who would have thought you could bake a cake on the BBQ!
I tried this one recently when we realised one of our summer visitors had a birthday when staying with us. Given every crumb was eaten it certainly seemed to hit the spot!
300g dark chocolate
200g unsalted butter
6 eggs
2 tsp vanilla extract
200g caster sugar
100g self-raising flour
2 tsp baking powder
300g crushed almonds
whipped cream and berries, to serve
Place the chocolate and butter in a small pot and melt gently over a low heat then set aside. Whisk the eggs, vanilla and sugar until light and creamy. Sift the baking powder and flour together, then stir in the crushed almonds.
Fold the egg mixture into the melted chocolate, then fold in the flour mixture.
Pour into a greased, lined 22cm solid-base cake tin and set the tin in a roasting pan with 2cm of hot water. Place in the Gas BBQ and cook with all burners on low until the water has evaporated (about 40 minutes), then cook for another 15 minutes. Skewer test to see if the cake is done. Cool in the tin for 10 minutes, then turn out. Serve with whipped cream and berries.
