BBQ Chilli Lime Prawns

Having just got back from the supermarket and seen the fabulous prawns we can buy here in the Algarve on special offer, I couldn’t resist them and decided to try out this really simple recipe for some good folks from my drama group, and what a massive success they were.

These BBQ Chilli Lime Prawns are super quick, easy and deliver an awesome flavour. Marinated in smoked paprika, chilli powder, fresh minced garlic, lime juice, salt and pepper, olive oil and honey, this combo delivers the perfect balance of smokey, sweet and citrus – a zesty and mouth-watering flavour combination.

All this and a glass of rosé from Rui Virgínia’s Barranco Longo vineyard and you have the perfect dish for a long lazy lunch or a sundowner barbecue.

This recipe below should feed four people as a main course and up to six people as a starter. Total time to prepare and cook is around 25 minutes.

There are not so many calories in this dish, but if you want to take it lower, then omit the honey.

Best served with a simple green salad.

Ingredients
■ ½ kilo to kilo of prawns, peeled
■ 1 teaspoon smoked paprika
■ ½ teaspoon chilli powder
■ 3 tablespoons lime juice, freshly squeezed
■ 3 garlic cloves, minced
■ ¼ teaspoon salt
■ ¼ teaspoon pepper
■ 2 tablespoons olive oil
■ 1 tablespoon honey

Instructions
1. Combine all ingredients in a large bowl and thoroughly cover prawns.
2. Cover bowl and marinate for 15 minutes.
3. Turn your grill to high or get your charcoal BBQ hot and skewer the prawns. Ensure grill is fully heated to high temperature before grilling the prawns.
4. Grill the prawns 2-3 minutes a side. When the prawns turn an opaque pinkish colour on both sides, they are cooked.
5. Serve with lime wedges.
