When making wine there is often a small amount left after bottling and this quality wine is of too high a standard to simply throw away.
At the Adega do Cantor winery in Guia none of the wine produced is wasted and the policy of the winery is to carefully blend the excess red wines and allow them to mature in full vats. The result of this is a very drinkable cross-blend vintage table wine, named after the winery itself, Adega do Cantor.
The Adega do Cantor red wine has an intense ruby garnet with spicy hints of dark stoned fruit as well as a developed bouquet of coffee and leather and a hint of cedar wood and tobacco.
Made up of 70 percent Syrah, 20 percent Aragonez and 10 percent Alicante Bouschet, this red wine is the perfect accompaniment to strong flavoured poultry or pork dishes right through to heavier beef stews.
While the winery produces a range of different wines the Adega do Cantor red table wine is sold exclusively to the local Algarve market through the cellar door at the winery and to distribution outlets in the Algarve.
Max Birch from the Adega do Cantor said: “We aim to support local restaurants by offering them the choice of being able to sell affordable, good quality, Algarvean wine to their discerning clients.
“While we are hoping that those in our community who value good local produce, made right here in the heart of the Algarve, will try it and perhaps consider it as one of their everyday drinking wines.”
